Make the perfect summer Mojito for National Mojito Day (Monday 11th July) – Recipe from award winning "Cocktail King"

Tony’s Top Tips for a Fantastic Summer Mojito

” When the sun is shining and you’re having friends over for a barbecue, there’s nothing better than an ice cold, refreshing Mojito. It’s really easy to make, but a lot of people I talk to, still aren’t sure exactly how to go about it. I’ve got some great hints and tips to help you make the perfect summer cocktail.

You’ll need to have a couple of pieces of equipment, even if you don’t have proper bar equipment, there are plenty of everyday kitchen utensils that you could use instead.

So firstly the ingredients:

50ml Aged rum

6-8 mint leaves

35ml freshly squeezed lime juice

2 x teaspoons of sugar

Splash of soda

Crushed ice, a mint sprig and serve with a straw

First off, add you’re sugar and a splash of soda to a glass. With a spoon, quickly dissolve the sugar in the soda and then add 35ml of freshly squeezed lime juice to your mojito. The key to a great cocktail is getting the balance between sweet and sour just right, lime and sugar is like salt and pepper to cocktails, so take your time measuring the lime and dissolving the sugar, it’ll make all the difference to the final cocktail.

You will need is a jigger or cocktail measure. They’re available is most larger supermarkets now, but even if you don’t have one, anything that looks around the size of a double measure will be fine, an egg cup, or espresso cup is fine. It’s all about getting the proportions right.

Add 50ml of rum, my preference is for a gold or aged rum, however a white rum works great. It’s best not to use a dark rum, it’ll overpower the drink.

Now just simply fill your cocktail to about three quarters of the way up the glass with crushed ice. The most important ingredient of any cocktail is ice. Add plenty, as it will keep the cocktail cold and stop the ice melting as quickly. You don’t want to water it down! Now give it a good churn. If you have a bar spoon great, if not, a normal fork works really well. The trick is to make sure all of the ingredients are evenly distributed through the glass.

Now top it off with a bit more crushed ice, to provide a cap and add your straw. Finally, take a mint sprig and hit it gently on the back of your hand – it breaks a membrane on the leaf, releasing the aromas – and sit it next to the straw.

There you have it, the perfect summer Mojito!”
