Farringdon favourite, Smiths of Smithfield, welcomes new Head Chef, Tim Dela Cruz, to the stoves at the Young’s city pub. With a wealth of experience working in an array of London restaurants, Cruz brings an elevated menu to Smiths second-floor restaurant, with a focus on sustainable, British produce, blended with flavours of his heritage.
Specialising in wood-fire cooking, Tim first discovered his love of cooking from an early age whilst watching his mum and aunt operating a hole-in-the-wall restaurant in his hometown in Manila. Honing his craft in kitchens across London, including Caravan and Bonnie Gull, led Tim to the position of Sous Chef at Jason Atherton’s The Social Company, before taking the role of Head Chef to open the Pig & Palm in Cebu, Philippines. Most recently, Tim held the position of Head Chef at Anatolian restaurant, Skewd Kitchen, in Cockfosters.
Bringing his creative flair to the upstairs restaurant, menus will focus on elevating the best of seasonal, British ingredients, blended with classic French cooking techniques and a splash of flavours inspired by his heritage. Expect a changing roster of seasonal specials and signature dishes, from bar bites, mains and steaks to plant-based options.
Cruz comments: “I am excited to have joined the team at Smiths of Smithfield ahead of the busy festive period. Working alongside the kitchen team, we are putting the spotlight on seasonal British produce, whilst incorporating authentic flavours and techniques from my home country to create an exciting menu.”
Located a stone’s throw from the station, Smiths of Smithfield is a Farringdon landmark, stretching across four-floors with an all-day bar, first-floor private rooms and rooftop terrace, with a dedicated restaurant on the second floor serving prime-cuts of meat and locally sourced produce. Home to a quality selection of cask ales and beers, an extensive wine list and boasting views over the city, Smiths of Smithfield is the ultimate destination for workers and foodies alike.
