These delicate dishes are influenced by Assaf’s childhood as he dares to revisit the Ashkenazi culinary tradition reflective of his younger years.   Boubalé provides the perfect base for a gourmet getaway in the heart of Paris, offering guests delicious cuisine and a vibrant atmosphere.

The menu will feature a decadent seafood bar with oysters, shellfish and clams, as well as traditional French cuisine such as cheese soufflé, boeuf bourguignon, gratin dauphinois and roasted camembert with truffle. For a festive treat over Christmas only, guests will have the chance to feast on a 4-hands menu in collaboration with Chef Adrien Brunet from Crillon le Brave, which showcases the culinary expertise of Maisons Pariente’s exceptional chefs. The hotel reopens for the season on 14th December 2023.

Wilderness Mombo has further enhanced its luxurious guest experiences with recent additions including a new fire deck, the creation of a series of intimate dining pods and a walk-in wine cellar. These new areas have expansive views over the surrounding plains and offer exciting options from which to enjoy Mombo’s superb food and wine offering. The new dining pods have been carefully positioned as a natural extension of the camp to maximise the uninterrupted views across the Mombo floodplain. They also offer guests a variety of flexible dining locations, from romantic settings to soulful meals enjoyed with family and friends. This offers the ideal environment to showcase Mombo’s food culture, which is relevant to its surroundings and centred around traditional African ingredients. Collaborating with local farmers and artisans, and thereby reducing the camp’s “foodprint”, Mombo’s menu celebrates locally-sourced heritage ingredients, such as baobab, millet, ditloo (black eyed peas) and morogo, similar to kale. Executive Chef, Tonderai Chipfupi, has introduced new additions to the lunch menu, including a Chief’s Platter and a Lechwe Haven Platter.
