Gareth Bale to open restaurant and mini-golf bar in Cardiff Wales and Real Madrid footballer Gareth Bale is set to open a new bar, restaurant and mini-golf venue in his home city of Cardiff.

ar 59 will be based in the 18,000 sq ft basement of the Capitol Shopping Centre in the city centre. When complete, the venue will boast two adults-only mini-golf courses, and two large bar and dining rooms.

With an expected opening in the summer, the project is the result of a new partnership between Bale’s company Elevens Group and entertainment brand the Depot. The opening follows Bales’ launch of Elevens Bar & Grill in Cardiff in 2017 in partnership with Brains Brewery. Bale said: “My love for golf is no secret, so I am delighted to be working with an independent Welsh company

to bring this concept to Cardiff. It’s all about creating a fun environment where people can enjoy something a bit different, and where everyone can have fun. So far, everything is going to plan and we’re on track to open this summer, which is really exciting.” Nick Saunders, founder and managing director of the Depot, said: “Taking empty and forgotten spaces and breathing new life into them is something we know we do well, but the Depot is still a relatively young brand, so teaming up with Gareth’s team at Elevens Group to open Par 59 is a big achievement for us. Innovation, sourcing and educational talks: Hotel, Restaurant & Catering (HRC) brings together the best of the industry

3–5 March 2020, thousands of professionals in the hospitality and foodservice industry travelled to ExCeL London for Hotel, Restaurant & Catering (HRC). As the industry movers and shakers gravitated to ExCeL London to discover the latest innovations making waves in the hospitality industry, the isles were bustling with visitors looking to source new products to drive their business forward. The presentations, talks, panel discussions and cooking demonstrations from the UK’s top chefs and industry pioneers on the Vision Stage, TechX and The Staff Canteen Live were fully booked with visitors left standing to listen to the latest trends and issues impacting the industry. One of the most well attended talks named, ‘Stars in their Eyes – Let’s talk Michelin’, included industry legend Tom Kerridge who commented “Great show as always, showcasing the best of the industry. Thanks for having me!” 600 exhibitors showcased their latest products across four shows, The Professional Kitchen Show, The Foodservice Show, Hospitality Tech Show and Interiors and Tabletop Show, ensuring there was plenty of choice for all that attended and feedback from visitors has been incredibly positive.

Content was king at HRC this year, as the show introduced a wealth of conferences, tastings and trend trails with key partners. Highlights included Sustainable ‘Hospitality 2020: Food Made Good’ with the Sustainable Restaurant Association (SRA) introduced by Raymond Blanc, Chef Patron at Le Manoir aux Quat' Saisons, ‘Hospitality Uncovered…. Is there really a hospitality industry skills shortage?’ in partnership with Hospitality Jobs UK, guided tours of The Professional Kitchen Show with the FEA Trend Trails and tastings on ‘The Great British Drinks Movement’ hosted by drinks expert and TV personality Jane Parkinson. The breadth and range of talent on show in the prestigious chef competition programme; International Salon Culinaire was incredible to see – almost 1000 chefs entered over 100

competitions across the three day show with many competitions across the Live Theatre and Skills Theatre oversubscribed with competitors wanting to take part and showcase their culinary skills.

Notable International Salon Culinaire 2020 winners included: Coworth Park Hotel (part of the Dorchester Collection) winning the Craft Guild of Chefs National Chef Team of the Year, Tomas Krasnan winning the Association of Pastry Chefs Dessert of the Year for the third consecutive time, Hull College winning the most successful college award on the Skills Theatre and the Chairman’s Award for the Skills Theatre was presented to Bethan Disley Jones from City of Liverpool College. “This year’s show has shown the true colours of our industry with everything that is going on in the world. We have had the most tremendous support from both competitors and visitors. The entry level has been over-subscribed twofold, and we have managed to allow all of them to compete with standards reaching new heights”. For the first time HRC partnered with ReFood (the International Salon Culinaire Food Waste Partner) to tackle food waste from exhibitors and the International Salon Culinaire competitions in a sustainable and environmentally friendly way by recycling food waste into renewable energy and biofertilizer. “We found this year’s show exceptional, we’ve got fantastic feedback, orders and met some fantastic people from

different backgrounds. We would highly recommend the show and we will back next year.” James Hemmings, Business Development Manager - Logicall Wireless Solutions. “HRC was an invaluable experience for us in the procurement world. The project was planned and executed by ILmio Design who specified Formica laminate in complementary tones with a tropical feel including deep turquoise (F7846, Grotto) and opulent gold (M2042, Brushed Gold Aluminium) to create bespoke furniture to dress the space. Elements of the original interior have been rejuvenated through the striking use of colour to accentuate the pre-existing architectural details. The new colour scheme is reminiscent of a beach sunset evoking a real sense of escape in a tropical paradise through the harmonious combination of sparkling pinks, turquoise, and gold.

Eat, pink and be merry at Barceló Málaga Hotel Barceló Málaga Hotel is a stylish destination for business and leisure travellers alike. The bustling city centre is just a stone’s throw away and the beach is within walking distance.

The hotel bar area, the Gastrobar La Santa María, is identified by a series of golden slats that create a sense of warmth and grandeur with trailing plants linking it to the prevalent biophilic trend. The beautifully designed bar commands attention and forms the focal point of the room. The bar is complete with striking bespoke shelving designed specifically for the space by ILmio Design. The renovated space has an energising yet cosy atmosphere, while also being truly en vogue thanks to the injections of lavish tones, amber lights, and curved lines. The use of curvatures within the space is accentuated by round mirrors, lamps, and tables all of which emulate the rotund architectural forms that fill the room as well as the use of tone-on-tone pink used throughout. The use of muted pink tones creates both an instantly iconic and soft aesthetic. ILmio Design Studio explains: “We have developed the interior into a living space, being sympathetic to the existing architecture, adding warmth through the presence of curved elements and the use of contrasting colours that coexist in harmony. We have personalised the space through the use of bespoke furniture and lamps made specifically for this project.”

The furniture has been created using Formica® laminates in turquoise and gold, to match the two predominant shades repeated throughout the space in the entrance arches, benches, central columns, slats, and lamps. This uber-chic renovation emulates the fun and stylish atmosphere of the hotel and provides an elegant oasis to the otherwise concretefilled surroundings. Technology Transforms the Appeal of Hospitality as a Career Employment in the hospitality sector has long been seen as a ‘job’ rather than a ‘career’. However, this is an industry that is being turned on its head by technology. From online delivery platforms to ordering via a QR code and paying via mobile phone, the customer experience has been transformed. Technology has also transformed the experience for the workforce; from social media management to managing multiple channels to market, hospitality now offers the chance for employees to gain skills that will foster long-term commitment and offer the status to encourage workers into the sector, explains Jacyn Heavens, CEO, Epos Now. New Career Prospects

The hospitality sector is booming, exceeding over £100 billion in 2018, with customer expectations for innovative food and experiences fuelling demand for both new and traditional providers. The way customers interact with hospitality providers has changed fundamentally. Bookings are now primarily made online and through recommendation sites. New routes to market have been provided by online delivery platforms. Social media has enabled the recent explosion in pop-ups. For hospitality providers, technology disruption has created challenges as well as opportunities: it is no longer enough to provide great food, a fabulous atmosphere and fantastic service. Winning and retaining customers now requires so much more.

But who is going to envisage and deliver this technology led customer experience? Staffing issues are already critical, with hospitality providers of all sizes struggling to recruit, manage and motivate the workforce. Average staff turnover is now 30% (more than double the UK average), while over half (53%) of 16-20 year olds would not consider a career in hospitality – not least because it is seen as offering limited career prospects. Yet this is a message that has to change. The chance to develop these essential technology skills provides fantastic career prospects for both school and university leavers. To succeed in this market restaurant owners need to create a range of hybrid roles that combine traditional activities with new skills. From managing customer relationships to curating social media content, Search Engine

Optimisation, even business analysis, the opportunities now extend so much further than waiting tables. Progression is not limited to the traditional roles; hospitality now opens the door to new skills and access to a truly compelling career. Technology Foundation The great news for hospitality providers is that existing technology has already transformed many traditional activities, freeing up time for staff to embrace these hybrid roles. With customers using online ordering consoles and pay-at-table technology, the number of waiting staff has been reduced. EPOS systems now automate the creation of rotas and the management of stock, cutting down the admin overhead. Staff can, therefore, embrace a dual role – combining waiting tables with real-time social media engagement, for example, to entice customers with nightly specials or exclusive invitations. Restaurant managers have immediate access to the customer reviews prompted when using a mobile payment app – and can change the menu on the fly in response. Hybrid roles enable staff to combine data insight with invaluable customer knowledge and restaurant experience to achieve continual business improvement. Opportunities to progress are also continually evolving – such as exploring the new routes to market. From adding a range of bottled sauces to the customer offer to leveraging the power of food delivery platforms with a dedicated kitchen within a low cost business park, the speed of technology enabled market change now supports amazing long term career prospects. This is an incredibly exciting time to be part of the hospitality industry.

Eastwell Manor Set in 3,000 acres of Kent countryside, The Manor House is more Downtown Abbey than a health spa, with plenty of historic charm and wonderful gardens. There are 76 bedrooms and suites spread across the Manor House and Mews Cottages, all decorated to a traditional English Style. Entering any of the rooms or suites at Eastwell Manor will leave you in awe of the attention to detail. The room I had even included a record player and collection of records! Something I’ve never seen in a hotel room before. Instantly the room felt like home, which in my opinion made relaxing that much easier. The spa, developed by Champneys was just a 50 metre walk from my room. I enjoyed a steam, sauna, swim and jacuzzi during my visit, all of which were state of the art. As well as access to these communal areas, treatments are available. I opted for a 25 minute massage from a senior therapist which absolutely out of this world. The Manor Restaurant, with it’s recently launched new fine dining menu, is located in the Manor House is situated in a gorgeous room with an open pit fire. To start, I had Scallops and pork belly with a butternut squash puree and red wine jus accompanied by curls of pork scratchings, the scallops where perfectly cooked, the pork belly was tender and the butternut squash puree really brought the entire dish together. Overall a fantastic dish! For my main course I had the 8oz fillet steak, which once again was impeccable with a nice char on the outside and cooked to perfection on the inside. Accompanied by a blue cheese reduction and triple cooked chips, it really made this the perfect hearty meal. Would recommend to all Carnivores! After such a wonderful meal I ask the helpful waiting staff if I could have my dessert delivered to my room and they were more than happy to oblige. Serving me a playful dish of a lemon tart with clotted cream, meringue and a passionfruit puree straight to my door! That was devoured very quickly followed by a homemade cocktail to wash it down to make the perfect end to a wonderful meal.

The service was fantastic throughout the whole meal, the attention to detail and care, regularly topping up our drinks and checking if we needed anything really allowed us to dine in complete comfort.

Zebra Projects design newest Shake Shack Shake Shack recently opened its second Singapore location at 89 Neil Road, debuting a distinctly design-focused Shack.

Built in 1924, the three-story site was previously home to the Eng Aun Tong factory which produced Singapore’s famed Tiger Balm ointment. The historic building was granted URA’s Voluntary Conservation Scheme in 1992, so the original neoclassical bones including columns, beams, windows and doors were all well-preserved. The heritage façade features strong geometric lines, arches and columns, and guests are welcomed from the festoon-lit terrace into the airy 450 square meter space. A blush pink and mint green palette complements

the surrounding baroque Peranakan shophouses while plantation shutters, Colonial rattan fixtures, mosaic tiling and arched wooden panelling all remain true to the area’s history. A magnificent tiger mural spanning an entire wall anchors the 138-seat Shack and nods to the Tiger Balm legacy. Signature Shake Shack elements such as park bench seating, metal cladding, I-beam signage and lush greenery harken to the original Madison Square Park location. Other distinct design details were updated, including rose gold accents, white menu boards and blush terrazzo. “We collaborated with Shake Shack to create warm community gathering places,” says Lee Roberts, creative director at Zebra. “89 Neil is thoughtfully designed to mirror Singapore’s distinct Chinatown neighbourhood and honour the rich

Hotel rejuvenation and why hoteliers need to plan for this years in advance The UK hotel market is a competitive one. Social media offers up the most hard to please customers and ratings are taken seriously by others, because thanks to TripAdvisor and the like, everyone is a critic.

I am not just talking about tired paintwork, sagging beds and indifferent staff having a negative influence on ratings. The bigger picture is that hotels are becoming more like hubs, serving a wider community and therefore needing to offer much more than merely somewhere to sleep. It is becoming increasingly important that hotels are relevant, up to date and of the high standard demanded by today’s customers, in order to stay ahead of the competition. This has the potential to increase a hotel’s overall revenue, but it comes at a cost, because the average lifecycle for a hotel to be “trendy” is up to seven years and after this, the perception quickly starts to change. A hotel which might have been a desirable place to stay several years ago, will inevitably start to look tired and out of date. The speed with which technologies, styles and trends evolve and progress is remarkable; even food and beverage tastes have changed. Think of how gin

has exploded in popularity and become the current “big thing”, with trendy gin bars popping up everywhere - whereas a few years ago it was a decidedly average beverage. The truth of it is that people are fickle and things that appear to be out of date, quickly start to lose their appeal – and with it their market share to competitors. It has also been shown that hotels that undergo a rejuvenation after approximately seven years, are least likely to experience a dip in profit. Therefor, it is essential that hotel owners plan ahead, anticipating the need for change and defining a phase of processes and budgeting accordingly. Although it is not always easy to predict how tastes and expectations of customers change, keeping an eye on trends and appointing an experienced designer will help deliver an environment and experience that is as accurate and engaging as possible. Something we are seeing a significant change to in recent years, is how ancillary hotel space is transforming. We are increasingly seeing ground floor space being fully maximized and utilised in a variety of new ways, to become areas with a purpose in their own right and helping to increase dwell time. This includes areas being given over to create work spaces, and an increase in the quality and importance of wellness centers; while bars and restaurants are becoming destinations that attract a host

of customers beyond just hotel residents. It is estimated that hoteliers need to start planning for this change as soon as three or four years ahead of the seven-year cut-off time. Having a strong procurement plan and committing to a programme with realistic deliverables and time-scales is essential. This is why it is so important to obtain the support of an experienced Project Management and Cost Management team. After all, there is no point in undertaking a rejuvenation scheme if it becomes sabotaged by spiralling costs and unnecessary delays. Working alongside a design team, they can utilise their experience to ensure that realistic solutions are achieved, without compromising on the creative elements that will give a hotel its own robust brand identity and customer appeal. Edinburgh hotel to ban throwaway plastic toiletries -And is calling on all Scottish hotels to do the same -

leading country hotel on the outskirts of Edinburgh, Dalmahoy Hotel & Country Club, is phasing out plastic miniature toiletries in its 215 bedrooms, which it estimates will save over 175,000 30ml plastic bottles – enough to fill three double decker Lothian buses – from ending up in the landfill every year. Instead, the newlyrefurbished hotel will mount larger-sized eco-friendly shampoo, shower gels and body creams to bathroom walls, which will be refilled from larger containers, from February this year, allowing guest to enjoy luxury Scottish Fine Soaps products in a much more environmentally-friendly way.

If the entire Scottish hotel industry followed suit, a vast amount of throwaway plastic could be saved from ending up in Scottish landfills annually.

Dalmahoy has been tackling a number of other initiatives since becoming an independent property almost three years ago. These include converting plastic drinking straws to paper, recycling all food waste gaining zero waste to landfill certification, installing a timer-controlled lighting system, and switching to a new fleet of electric golf buggies.

Other plans in the pipeline this year for Dalmahoy include introducing electric car charging points and continually looking at ways to improve waste management – including at renewing waste contracts, waste bin inserts so that it is easier for guests to separate waste in their rooms and a vac pack machine to prolong the life of food and therefore reduce food waste.

The hotel’s biggest program to date has been installing a renewable energy source through a combined heat and power plant which will save more than 9 tonnes reduction in carbon emissions in comparison to traditional energy sourcing.

Groupe GM Launches New DAMANA® Solid Range As part of its ‘Care About Earth’ program, Groupe GM, the world leading player in the hotel amenity industry is launching the first solid amenity bath line branded Damana® Earth & Sun. The Damana® Earth & Sun Solid Range is enriched with aromatic plant extracts and celebrates the Mediterranean nature.

AMANA® is a Groupe GM brand, well known for its simplicity and happiness. Inspired by these values, Groupe GM has created a range of amenity lines that combine the richness and authenticity of products influenced by nature and traditions, with today’s expectations of well-being, effectiveness and ecology. This new solid line strengthens Groupe GM’s commitment to sustainability and follows closely their ‘Care About Earth’ program which aims to reduce products’ impact on the environment.

The DAMANA® Solid Range is a vegan amenity line, formulated with natural origin ingredients. Thanks to its solid form, water consumption is significantly reduced by nine times that of the amount used with the classic formulas. These products are true “soap free », meaning these dermatological bars are ideal for sensitive and atopic skins. They are made with a blend of gentle surfactant, as the Sodium Cocoyl Isethionate obtained from coconut oil, emulsifiers and emollients. As they contain neither soda nor SLS, their pH are naturally close to the water’s, which make them suitable for sensitive skins.

Without any plastic in its packaging features, the solid amenities are packaged in FSC cardboard with water resistant varnish. There are three 20g solid bars including citrus fruit shower gel, juniper shampoo and white nettle conditioner, all of which have been tested under dermatological control. The head notes of bergamot, lemon anise and heart notes of cyclamen and lily of valley add a touch of indulgence to this beautifully scented amenity range. The DAMANA® Solid Range was created with hotel guests’ best comforts and interests in mind.
